Just wondering...what dictates whether a mouse function will be detectable or not? Is there a sure way to test it out? (Short of making a character and running it for 10 hours straight with a test function).

Well, if the cursor doesn't move like a human would.. meaning like MoveMouse or MoveMouseSmooth where it's like pixel accurate and moves in straight lines and such, yes it's very detectable. Just think about the way you move your mouse.

Then why not just make it go in a straight line with random movements side to side zig-zag fashion?

Watch your own mouse movements. They're actually a spline of some weird sort. Simply because moving up is easier than moving away is easier than moving towards is easier than moving down for our hands. Also because at the far ends of the move, your wrist tends to be either far outstretched or very bent.
EDIT: Go into MS paint and see how straight of a line you can draw moving the cursor quickly to make a big X.

Because humans don't move in a zigzag fashion(at least I don't) and we're assuming the mouse movements are tracked if you're flagged.
